So if you have a Thermomix, then you will know that beautiful homemade custard is one of the easiest things you can make in this wonderful machine! However if you don't have a Thermomix, it is still really easy to make your own custard! This one is one of our favourite flavours and it's dairy free so that's a bonus.
Ingredients:
400ml can coconut milk/cream
200ml water
2 free range eggs
3/4 cup rapadura or raw sugar
1/3 cup cacao powder
1 tsp vanilla essence
2 tbsp gluten-free cornflour
Method:
On stove top: dissolve the cornflour in some water and then add it, with all the other ingredients to a saucepan. On a medium heat, cook, whisking constantly for a few minutes until the custard has thickened to the desired consistency (don't forget the custard will thicken further as it cools).
OR
In Thermomix - add all the ingredients to the TM bowl and cook 7min/90deg/sp4.
Hi Iwa I just had a question about this recipe - would almond milk work in place of the coconut? I don't really have any problems with coconut milk (I adore coconut in all its forms) but I just made some almond milk and need a way to use it up! Cheers

ReplyDeleteIt worked great! Much lighter than coconut milk so I reckon I'd save it til summer and use coconut milk now but it's still really good!

ReplyDeleteJust made this with 1/2 cup coconut sugar instead of the 3/4 rapadura and added a pinch of sea salt. Thickened up perfectly. So yummy! I can't believe how easy it was. I am so excited to give it to the kids tomorrow (if hubby and I don't eat it all tonight!).

Deleteso glad I found your recipes...you have the best creamy milk chocolate like recipes I have found so far. Most recipes with Cacao I have found too bitter and my little man won't eat them but yours are delicious and kid palate friendly :)

DeleteThis is SO good!! I used 2 big tablespoons of brown rice flour instead of cornflour and it turned out like chocolate pudding, and now that it's cold it's like chocolate mousse. I also used 1/2 cup coconut sugar and half a vanilla bean instead of extract. Thanks Iwa!
